No, no I can’t say they have. I’m pretty active and try to eat plenty of other healthy foods. Also, very rarely do I get to eat much of my own food because my family typically eats most of it before I get any! If you stick to my egg recipe/ combinations you shouldn’t get fat ;)


Cucumber Sandwiches

The perfect spring sandwich! Fresh, crispy, and delicious…

All you need is:

  • Fresh Bread
  • A Cucumber
  • Mayo
  • Dry Dill

Avocado Wrap

Simple, quick, easy and oh so good.

  • Trader Joes Habenero Lime Wrap
  • Avocado
  • Chedder Cheese
  • Lettuce
  • Smoked Chipotle Seasoning

Miso Soup with Pork Dumplings
This soup was super quick and easy. I already had some pork dumplings made up (just some garlic, onion, green onion, ginger and soy sauce mixed with ground pork and baked in the oven.)
2 c. Water 
1 Tbs. Red Miso Paste
2 Small Sliced and Sauteed Baby Portabella Mushrooms
1/4 c. Sliced and Sauteed Onions
1 Clove Sauteed Garlic
1 3inX2in Block of Cooked Soba Noodles
Boil the dumplings in the water, then add the miso to dissolve it. Add the cooked veggies and noodles and enjoy!

This was such a different idea for an omelette and it tasted SO good I had to share it with you…even though it’s a little late for egg friday (sorry!).
Sautee the following until onions are browned and mixture is hot:

A little Sliced Onion
Ground Hamburger
French Fries (cooked-these can be homemade)
Pour Eggs over the mixture:
1 Egg (wisked with milk, onion powder and garlic powder)
Flip Eggs when cooked to desired brownness (I like mine browned, I think it adds flavor). Top with:
1/2 c. shredded cheese of choice (I used pepper jack, nom.)
Quickly fold omelette over and top with Bread Crumbs and flip the omelette again to brown crumbs.
Enjoy!!!

Food Blog Problem #1

When you make a dish and it’s so good that it all gets eaten before you have the chance to snap a photo of it. Bummer. Guess I’ll have to make it again!


Pumpkin Spice Chiffon Pancakes

These pancakes are absolutely delicious and perfect for a fall or winter breakfast. Definitely a yum and nom nom nom recipe.

1. Mix in bowl

  • 1c. Flour
  • 1ts. B. Powder
  • 1ts. B. Soda
  • 1/2ts. Salt
  • 2Tbs. Sugar
  • 1ts. Cinnamon
  • lil Allspice
  • lil Nutmeg
  • lil ginger

2. Whip in Mixer (beat till it forms stiff peaks)

  • 2 Egg Whites
  • 1/4 ts. Orange Zest

3. Add to Dry and Mix

  • 1/2c. Milk
  • 1/4c. Half and Half
  • 1/2c. Pumpkin
  • 1 Yoke
  • 2Tbs. Oil (or melted (browned?) butter for richer flavor)
  • 2ts. Vanilla Extract

4. Fold Egg Whites into Batter.

5. Cook - add chocolate chips if desired.

6. Enjoy! :)

Roasted Chicken
Cheddar Jack Cheese
Mozzarella Cheese
Romano Cheese
Milk
Sour Cream
Oregano 
Garlic
Onion 
Mushrooms
Fettuccine
Extra Virgin Olive Oil 
Sea Salt 
Chicken Broth
1. Cook the pasta.
2. Sautee onions with olive oil. Remove from pan.
3. Sautee mushrooms until browned. Add garlic, wait for it to brown, then remove from pan.
4. Melt a tab of butter in the pan and add the oregano so that it sizzles and infuses the butter.
5. Add a small portion of milk to the butter and then add a small portion of the cheeses.
6. Add the sour cream to the cheese mixture as well as the chicken broth (just a little for flavor).
7. Add more cheese to reach desired thickness. Add salt to taste.
8. Add the chicken and mushrooms/ onions to the sauce.
9. Plate your pasta and top with the alfredo sauce.
10. Enjoy! :)

Nommy Lasagna

Rating: A total nom.

  • 3 large sausages
  • 1/2 large onion
  • small red pepper
  • small green pepper
  • 2 small zucchini
  • package of mushrooms
  • 3 cloves garlic
  • 1 32oz can of organic crushed fire roasted tomatos
  • 1 package no cook lasagna sheets
  • 2 8oz packages of mozzarella cheese
  • 1/2 cup italian bread crumbs
  • olive oil

1. Cook sausages.

2. Saute onions. Put in bowl.

3. Saute peppers. Put in bowl.

4. Saute  mushrooms and garlic. Put in bowl.

5. Mix all sautéed veggies together with sauce.

6. Slice zucchini finely.

7. Chop sausage into crumbles.

8. Layer lasagna; Sauce, veggies, zucchini, sausage, cheese, pasta (repeat 3x). (top with cheese)

9. Bake 30 minutes at 350F covered with foil.

10. Uncover and sprinkle with bread crumbs. Bake for 15 more minutes.

11. Remove from oven and let cool 5 minutes.

12. Serve and Enjoy!!! :)
